I have extended my catering services to include lunch/dinner options for the main break during the IPT/APT, which runs for a minimum of 5 hours per session (the lunch break is preferably scheduled around the halfway point, or at the end based on the learning cohort's preference). Lunch options are offered to support overall health and sustain steady energy levels during long periods of learning i.e. a break can help with improving focus, participation and therefore engagement, which is beneficial to the learning process because it enables more knowledge to be retained, thus making it easier to turn into natural understanding. My first lunch or dinner menu option is:
Biafran Sandwhiches
My range of Biafran sandwiches feature a thin freshly baked tasty wholemeal sub-style bread roll that is crispy on top and fluffy on the inside (baked from scratch); health conscious, but tasty meat, seafood or vegetarian/vegan filling i.e. non-greasy*; and complimentary fresh or seasoned and roasted vegetables* to ensure a healthy dose of natural nutrients; with the addition of cheese (selected for minimal use, palatability, and maximum taste) and carefully selected or prepared sauces being optional (My Igbo tomato sauce/ketchup is made from scratch using natural produce and not reconstituted tomato pastes). My bespoke Biafran sandwich range features the use of healthy oils/fats, and features the added bonus of blessed Holy oil and/or Holy water in its ingredients, plus the wholefood ingredients and high fibre content makes my sandwhiches very filling. Furthermore, my Biafran sandwiches are served with a side of lightly salted baked plantain slices (or savoury banana chips if plantains are unavailable), which is included to meet the energy intake needs of different people i.e. varying portion size based on personal macronutrient needs).

Chicken Burger (shredded Biafran style chicken options (see near the end of the page) with egg, fresh salad, and seasoned vegan mayonnaise (I have a draft recipe, but I cannot access the ingredients) OR a chicken fillet with fresh or roasted salad, extra Biafran sauce(s), Biafran ketchup or Biafran mayonnaise).
An example sandwich is shredded Spicy Tomato or Southern style chicken with Biafran style coleslaw OR Southern style chicken with tomato, fresh salad greens, egg, onion rings, and Biafran mayonnaise i.e. a Super Chicken Salad Sandwich.
Akara Burger (a Nigerian black-eyed bean fritter patty, made in my own special, tasty and healthier way i.e. baked and with an improved nutritional profile)
Biafran style Cheesesteak (uniquely seasoned beef mixed with carmelised onion, and coated in vegan cheese sauce (some real cheese can be added, but less is needed, which = less fat and cholestrol).

***Example 1: Someone looking to improve their metabolism after sustained periods of low-carb dieting would start with a salad; progress to a ¼ piece of bread on the side, then ½ a piece of bread on the side; move on to an open sandwich and then to a full sandwich – which is done to readjust and heal the metabolism overtime to properly enable the body to healthily process carbohydrates while avoiding excess fat accumulation that is typically linked to increasing dietary carbohydrate content. Hence, this strategy is suitable for people who have used long-term low-carb diets, or strict caloric restriction to maintain a low weight and/or minimal body fat. The progression period for metabolic adjustment after consuming blessed oil needs to be tested, but it is estimated that a single progression would occur weekly (4 weeks seems to be the estimated completion time at a Christian Retreat (Wellness Centre) that allows for learning and leisure, as well as social, emotional, biological (physical health), psychological and spiritual wellbeing).
***Example 2: Someone who is wanting to lose weight but struggles with junk food cravings could order a ‘cheeseburger-style’ Biafran Turkey Burger Sandwich with vegetables on the side (roasted vegetable salad). As part of positive lifestyle change the individual would eat the roasted salad and plantain first for primary nutrition and satiety (fullness), and enjoy their ‘cheeseburger style’ Biafran Tukey Burger Sandwich afterwards.
**Plantain - Plantains are grown and commonly eaten by people in the South-East of Nigeria (Biafra) and is very popular in many other nations. Plantain is a fruit similar to bananas and can be prepared in a variety of ways for different dietary needs. Plantain has a rich nutrient profile that is beneficial to heart, brain and muscle health, while remaining tasty and filling, whether it is sweet or savoury (salted).
Biafran Rice Bowls
My range of Biafran Rice Bowls are a simple, delicious and tasty customizable meal that includes carefully selected and prepared rice to minimise starch and excess carbohydrates for a more health coconscious meal i.e. lower GI, that is served with my version of Igbo tomato stew*; a range of vegetables; a choice of specially seasoned protein (beans, chicken, seafood, or beef)*; and optional beans and/or egg for more protein (enables the personalization of carbohydrate-protein intake). My Igbo tomato stew is made from scratch using natural produce and not reconstituted tomato pastes. Furthermore, my Biafran Rice Bowls are served with a side of lightly salted baked plantain slices (or savoury banana chips if plantains are unavailable), which is included to meet the energy intake needs of different people i.e. varying portion size based on personal macronutrient needs).

Biafran Bread & Stew (Fasting Meal)
Bread & Stew is a simple and tasty meal commonly eaten by Igbo people, however, I enjoy mine with my own freshly baked bread, and the added taste, filling and nutritional value of complimentary seasoned vegetables (choice of vegetables, or choose from 3 different options). As a ‘Daniel Fast’ lunch option, bread and stew provides basic and essential nutrition in a humble/restrictive manner compared to other lunch options. If extra protein is necessary, chickpeas or lentils can be added to the stew. My Igbo tomato stew is made from scratch using natural produce and not reconstituted tomato pastes. This fasting option is also suitable for recovering diabetics, and for most people in these times because the blessed oil and water in the food is needed for healing and quicker spiritual fortification. The bread served fresh or lightly toasted, and comes pre-cut, and so, the eating style is simply dip and scoop!

Biafran Style Fries
My Biafran style fries are tasty and crunchy seasoned and battered chunky fries (smaller than chip size) that are prepared in a way that minimizes starch and excess carbohydrates for a more health coconscious meal. The Biafran style fries are designed with fat burning properties, with its batter boosting fibre content to further lower the GI to provide a blood sugar friendly meal. My Biafran style fries are baked (non-geasy) and served with roasted vegetable salad, and a choice of either Chicken Schnitzel, Fish Schnitzel or Akara (for vegans and vegetarians), kebabs (suya-style, but with some roasted vegetables) OR Biafran style kofta (meatballs made from a choice of fish, trukey, lamb, beef, chicken, pork that is seasoned and features selected vegetables. Alternatively, yam fries will be an option once I am able to acquire some to test their cooking time – yam is a common root vegetable eaten by Igbo people, and is a valuable source of nutrition. To meet varying protein and energy needs the portion of fries and protein choice would be modified.

Biafran-style Garlic Bread & Suya-style Kebab
My new Biafran-style garlic bread is served with Nigerian (Hausa) chicken, beef or moi moi kebab (suya-style, but with some roasted vegetables), and a tasty and refreshing salad on the side. My garlic bread can be described as a bruschetta and garlic bread hybrid, and is flavoured with my vegan butter mix made from carefully selected natural ingredients to mimic the taste of real butter (does not use premade vegan butter). Moi moi is a Nigerian savory steam-boiled bean cake. For the vegan and vegetarian kebab option, it is coated with suya-style marinade and seared to make it extra crispy on the outside.

Biafran style Ravioli
My Biafran style ravioli features a filling of choice meat or fish (minced), a select range of vegetables in either tomato or cheese sauce, which provides protein, fibre, and a healthy range of nutrients (beans or vegan “chicken nuggets” for vegans and/or vegetarians). The ravioli is made from the same pasta dough listed on the lunch workshop menu, and therefore, has the same nutritional profile.
Moi-Moi
Moi moi is a Nigerian savory steam-boiled bean cake that often features egg (no egg is the vegan option). I also include vegetables with a non-overwhelming and complimentary taste in my own moi-moi, and bake it so that it forms a delicious crust and has a more firm texture. My moi moi is served with baked corn (ọka) that is available plain or with my vegan butter mix. Furthermore, my moi moi is served with a side of lightly salted baked plantain slices (or savoury banana chips if plantains are unavailable), which is included to meet the energy intake needs of different people i.e. varying portion size based on personal macronutrient needs).
Biafran-style Chicken Nuggets
My new Biafran-style chicken nuggets are made from a combination of poultry meat, which is delicately seasoned and coated in a thin batter and baked - and as a result my chicken nuggets, are tasty, lean and delicious, and are . My Biafran-style chicken nuggets are served with Biafran-style fries, and my Biafran-style coleslaw (vegan dressing can be prepared or carefully selected). For vegans and vegetarians, I am utilizing a modified version of my old recipe that uses a vegetable and other natural ingredients to form a tasty meat-substitute, which will be seasoned with my roast chicken seasoning to imitate chicken flavour, and battered and baked in the same manner as the regular chicken nuggets (I am unable to obtain the ingredients, but I have made it before*).
Vegan onion rings are now available as an alternative to meals served with Biafran style fries. Onion rings can also be added to Biafran sandwiches i.e. a Turkey burger sandwich with onion rings, classic (tomato, lettuce) or roasted vegetables, cheese sauce, and Biafran style tomato sauce/ketchup.

Biafran style Shepherd’s pie (Casserole)
My Biafran style shepherd’s pie is an old/modified recipe that features turkey mince and complimentary vegetables in a tasty tomato based gravy-like sauce, and is topped with buttery mashed potatoes (flavoured with my vegan butter mix made from carefully selected natural ingredients to mimic the taste of real butter). My shepherd’s pie casserole is made without pastry, and although the original version does not use beef - beef, seafood and vegetarian/vegan variations are also available. As for sides, the shepherd’s pie is served with Biafran style coleslaw and a side of plantain.
I am considering making a Biafran pasty version of the shepherd’s pie for those who enjoy pastries.
Biafran Pumpkin Soup
My Biafran pumpkin soup is an old recipe that makes use of roasted and carmelised vegetable for a delicious and creamy and wholesome soup. My pumpkin soup is served with Biafran-style garlic bread, and a choice of seasoned protein that can be added into the soup or eaten on it’s own (beef, fish, chicken). For vegans and vegetarians a side of kidney beans in a tomato based sauce would be served instead.
My Biafran Pumpkin soup with garlic bread and beans is a fasting meal, but a comfort food fasting meal, which means that is served for people who are dealing with more significant emotional issues, but need to fast for particular sins.
Biafran style Hotdogs
My Biafran style hotdogs are simply a sausage that is served in a specially prepared bread bun that is topped with roasted and/or caramelized vegetables, optional cheese and a choice of sauces including vegan cheese sauce and my Biafran style tomato sauce/ketchup. For vegans and vegetarians a vegan “chicken nugget” sausage would be made. The standard portion is two hotdogs with a choice of salad coleslaw and a side of plantain.
I would like to make my own sausages, but suitable and acceptable standard sausages can be used, and would include seasoned varieties of turkey, chicken, beef, lamb or pork ( I don’t eat pork for cultural reasons, but other Christians can still eat it).
Biafran style Chicken (Wings & Drumsticks)
Yummy marinated or battered chicken wings and drumsticks that are inspired by the flavours of Nigeria, America, the Caribbean and Asia. The chicken and drumksticks are prepared in a way to remove impurities, tenderise the meat, and maximise flavour. Hence, my chicken remains juicy, full of flavour and lower in fat compared to fried chicken (mainly uses natural fat found in the chicken skin which is a good source of collagen i.e. it is helpful for skin/youth restoration). The Biafran style chicken can be served with any variation of rice, Biafran style fries, mashed potatoes, shredded and added to a Biafran style sandwich, or simply as a marinated chicken thigh fillet*. The Biafran style chicken is also served with a side of plantain, and a salad of choice. For vegans and vegetarians the marinades are made into dipping sauces for the vegan chicken nuggets.
*Provisional Menu Item - Biafran Style Pizza
2 of the 3 marinated chicken varieties will be pizza flavour options i.e. Sweet and Spicy Chicken and Spicy Tomato Chicken. The Pizzas will also include tasty and complimentary vegetables for more fibre and nutrients (can be customised). I was able to make a pizza base with some of the ingredients availble to me, and so, I was able to achive the nutritional profile that I wanted, which is higher in nutrients, higher in protein, low in fat and low in salt. My new Biafran style pizzas are personal sized, features a thin crust (has no traditional crust) and is loaded with topping. My Biafran style pizzas also make use of my Biafran style pasta sauce and cheese sauce, plus small amounts of selected cheeses to make it suitable for regular consumption.
Biafran style Beans
My Biafran style beans are chosen for their nutritional properties, and are cooked with Igbo/Nigerian tomato stew to give it flavour and a delicious sauce, while remaining low in fat. My beans include vegetables for extra nutrients and complimentary taste. The beans can be eaten on their own, served with rice (plain or jollof), Biafran style fries, onion rings, moi-moi, mashed potatoes, or bread; and is served with a side of plantain. akara, and an optional salad.
Biafran Style Potato Salad
My Biafran style potato salad is inspired by the European dish (popular, and there are many versions in different countries), and is a simple , but delicious meal that features selected vegetables to provide complimentary flavour. As for additional protein, the 2 options are fish or chicken, and optional egg, with the salad being lightly seasoned and reasonably coated in a healthy tangy and creamy dressing (vegan friendly). For vegans, no eggs would be included, and the protein would be substituted with beans and/or vegan chicken nuggets. The potato salad is served with a side of plantain and onion rings.
Biafran Tacostadas
Inspired by the South American foods, tacos and tostadas, my Biafran tacostadas makes use of my existing menu items to create a new dish. Instead of a corn tortilla, my nacho chips are turned into a taco shell, and are lined with avocado dip*, which helps stick the filling to the inside of the tacostada shell. The tacostadas are then filled with seasoned mince meat or a choice of protein, which is topped with Biafran purree to help the rest of the filling hold together, and is topped off with cooked or fresh greens, roasted capsicum, corn, caramelised onions, and other optional vegetables. The Biafran tacostadas can be topped off with Biafran style salsa, and optional cheese sauce (and small amounts of cheese). The Biafra tacostadas are served with a side of plantain and Biafran style coleslaw. For vegans and vegetarians, Biafran beans, akara, moi-moi and vegan chicken nuggets can be used in the place of animal protein.
Biafran style Sushi
I learnt to make sushi in home economics classes in high school, and I have made it ever since. However, instead of making normal sushi, I have designed a more nutrient dense, but still yummy version that is a cross between make and nigiri sushi. The new sushi design avoids me having to roll the sushi, and that is because rolling sushi was never my strong point. The flavour selections are any cooked protein variety, specially selected vegetables prepared for nutrition and taste, avocado and/or vegan mayonnaise, and is served with coconut aminos, instead of soy sauce. There would also be vegan and vegetarian alternatives available.
*Organic ingredients are subject to availability, and additional snack requests like special smoothie combinations may be considered based on my extended repertoire of recipes, and general cooking skills. Independent Christian Counsel must be made aware of any allergies prior to a WSC order, but it should be made clear that the Blessed Holy oil and water would naturally clear (heal) allergies. The Health Drink mentioned in The Discipline of Health Management, which can be described as a ‘Green Juice’ would also be available as a stand-alone drink option or a “mix-in booster” for smoothies.
NOTE: It should be understood that any unauthorized use, misuse or illegal attainment of Blessed Holy oil or Water; Legitimate Christian Teachings or Trainings; the leaking of classified information, Snacks/Food/Drink, Christian Skincare and Haircare products or anything else would immediately cause the effects to fail and would revoke the Holy Spirit or permanently block the reception of the Holy Spirit (guaranteed condemnation to hell in these times, and probably thereafter). Hence, there are no beneficial effects for non-Christian people i.e. people with no Christian potential, who are and will be further barred from accessing all the above. As a further deterrent to poor choices, a “water of bitterness-like” condition, but more harsh (Number 5:17-22) would be placed on all the above to deter unrighteous choices.
