I have extended my catering services to include breakfast options for APT/IPT sessions which are scheduled early in the day because of their length. This enables the APT/IPT group to enjoy a delicious meal together before starting the workshop, which can help lighten the mood and encourage participation in learning because they are likely to feel more comfortable contributing to class discussions or presenting workshop activities, such as a teaching demonstration using The VMFCP frameworks as a guide, or a trial pastoral care session. Due to the importance of the content and the duration of the APT/IPT, the breakfast options are offered to support steady energy levels during long periods of learning, which helps participants maintain their focus.
The new breakfast menu is designed to provide a healthy start to people’s day, while still being delicious and tasty. The food is portioned so a range of delicious foods can be eaten at once, for example, I find meals more enjoyable and satiating when I am able to have something sweet and savory at the same time.
Biafran Omelette
My Biafran style omelette is based on the popular Igbo-style scrambled egg combination of tomato and onion, but with the addition of other nutritious vegetables and is specially seasoned. My Biafran style omelette is baked, and so it is served like a crustless quiche. The Biafran omelette is served with a side of onion rings, a fruit salad, and Biafran milk. For vegans, akara or moi-moi is served instead of the omelette.
Biafran style waffles
Served with akara OR a Biafran style omelette (an omelette with vegetables including tomato and onion), a fruit salad and Biafran milk.
Breakfast Puff-Puff
A large baked-puff with whole fruit filling (the whole fruit jam filling is smooth, and rich in colour and taste i.e. no chunks of fruit). The breakfast puff-puff is served with a side of akara, and/or a Biafran omelette, and Biafran milk.
Biafran Breakfast Sandwich
A Biafran style sandwich featuring a turkey burger patty (or vegan chicken nugget patty); a Biafran omelette, that is topped with Biafran style salsa and cheese sauce. The Biafran breakfast burger served with a side of fruit salad and Biafran milk, and a side of akara for vegans because they do not eat eggs.
Biafran Style Oats
Oats with the addition of tasty ingredients designed to provide a delicious and nutritious breakfast meal that provides energy, protein, fibre and nutrients for a healthy start to the day. My Biafran style oats come in a range of flavours, and are made with naturally fortified plant-based milks (plant milks can be prepared, or carefully selected). For extra protein, the oats are served with a sprinkling of crushed roasted nuts on top, and a side of Biafran fruit salad/fruit smoothie, and/or akara.

Biafran Toast
Toasted fresh bread severed with my Biafran avocado spread, with the addition of a choice of protein, a Biafran omelette, or akara. My Biafran avocado toast is served with a side of fruit salad and Biafran milk. Alternatively, plain toast options with Biafran style butter (vegan) and jams, chocolate spread (nutrient rich, lower in sugar, high in protein), or nut butters (sweet or savory versions available), including peanut butter and jelly (jam) combinations are available, as is bread and stew. The plain toast options are served with a side of omelette and/ or akara to ensure that protein needs are met.

Biafran Breakfast Parfait
Toasted and cinnamon seasoned oats layered with fresh sliced berries and mango, whipped vanilla coconut cream (the coconut cream is naturally flavoured with selected vinegar to give it a profile similar to yogurt i.e. slight tartness and healthy bacteria). The Biafran breakfast parfait is served with Biafran omelette, and/or akara and Biafran milk.
Biafran Breakfast
A Biafran hot dog that is served with a Biafran omelette, a portion of moi-moi, and a side of Biafran fruit salad and Biafran milk. For vegans, and a vegan sausage can be made out of the vegan chicken nuggets (sausage shaped), and extra moi-moi to make up for the omelette.
Biafran Hashbrowns
A round potato fritter seasoned with chives and other complimentary herbs and spices with a soft centre and crispy crust. My new Biafran hashbrowns are low in fat compared to typically hashbrowns, with the crust providing a boost of fibre. The Biafran hashbrowns are served with a Biafran omelette, a portion of moi-moi, and a side of Biafran fruit salad and Biafran milk. Alternatively, the hashbrown can be added as an alternate side to the Biafran breakfast, or served with Biafran style beans.
Biafran pancakes
Biafran pancakes are made with popular Igbo/Nigerian ingredients for a healthy start to the day. My Biafran pancakes are full of fibre, a range of nutrients and also feature fat burning properties. The original version of my pancakes are topped with my curated granola mix of selected and yummy nuts, seeds and toasted oats, which provides additional protein and nutrients (can be customised), and is topped with a drizzle of my new natural buttery-honey syrup in original, salted-caramel, ginger or cinnamon flavours (an alternative for vegans who avoid honey is also possible). The pancakes are served with a Biafran omelette (or akara), Biafran fruit salad, and Biafran milk. Alternatively, the pancakes can be topped with my wholefruit jams, with the option of a dollop of whipped cream (same preparation style as the parfait) or plain vailla cream. The original version of my pancakes were designed for people who prefer extra protein and a more hearty start to the day, but with less fat/grease, which makes the meal lighter and healthier, but still satiating.
Biafran Granola Breakfast Bowl
My newly created 6 grain, seed and hidden legume granola mix is slightly sweet and is flavoured with notes of maple and vanilla. The addition of nuts is optional, but highly recommended for additional healthy fats and other nutrients, and also more flavour. For example, if someone wanted extra sweetness then a choice of ginger, vanilla or cinnamon cashews could be added. The granola mix is served with the parfait style whipped coconut cream and a variety of choice fruits. The Biafran Granola breakfast bowls are served with a side of Biafran milk, a Biafran omelette (or akara). It is also possible to eat the granola as a muesli style cereal with a choice of Biafran milk, which would also add flavour and more natural sweetness*(I only use 100% natural sweetening ingredients, which are low in GI and also feature some nutrients) OR plain nut milks with a choice of fruits.

The main protein is scrambled eggs or a vegan alternative, which is served with a range of vegetables. The breakfast nachos and tacostadas are served with a side of Biafran fruit salad and/or akara and Biafran milk.
Biafran Banana Bread (see the snack menu)
Typical icing is not permitted on breakfast choices, instead a swirl of cashew, almond, and peanut butters or chocolate spread is used instead.

Biafran Breakfast Cookies
Large cookies designed for a healthy and convenient start to the day that provides fibre, healthy carbohydrates, fats, protein and range of nutrients. The cookie is based on the Biafran Golden and Double Cream Chocolate cookies, but with an improved nutritional profile. The cookies are avialble in 1) normal thicker cookies that can be topped with nut butters or chocolate spread, or a cookie sandwich that is made from two thinner cookies and filled with thickened wholefruit jam, chocolate spread, or nut butters i.e. the PB&J toastie is always cookie sandwich)

*Organic ingredients are subject to availability, and additional snack requests like special smoothie combinations may be considered based on my extended repertoire of recipes, and general cooking skills. Independent Christian Counsel must be made aware of any allergies prior to a WSC order, but it should be made clear that the Blessed Holy oil and water would naturally clear (heal) allergies. The Health Drink was previously mentioned in The Discipline of Health Management, which can be described as a ‘Green Juice’ would also be available as a stand-alone drink option or a “mix-in booster” for smoothies.
NOTE: It should be understood that any unauthorized use, misuse or illegal attainment of Blessed Holy oil or Water; Legitimate Christian Teachings or Trainings; the leaking of classified information, Snacks/Food/Drink, Christian Skincare and Haircare products or anything else would immediately cause the effects to fail and would revoke the Holy Spirit or permanently block the reception of the Holy Spirit (guaranteed condemnation to hell in these times, and probably thereafter). Hence, there are no beneficial effects for non-Christian people i.e. people with no Christian potential, who are and will be further barred from accessing all the above. As a further deterrent to poor choices, a “water of bitterness-like” condition, but more harsh (Number 5:17-22) would be placed on all the above to deter unrighteous choices.
